Description
This product is a white or pale yellow powder with hygroscopic properties. Its aqueous solution exhibits an acidic reaction. Pepsin has the ability to break down proteins, but the pepsin secreted by chief cells is in the form of an inactive zymogen, which must be activated by stomach acid to function. Hydrochloric acid activates the pepsinogen and provides the acidic environment necessary for pepsin activity. Pepsinogen, secreted by the chief cells of the stomach fundus, is activated into pepsin under conditions of pH 1.5-5.0. Pepsin breaks down proteins into peptones, and partially into amino acids such as tyrosine and phenylalanine.
